I wanted to make something quick and easy but had only onions and tomatoes in my kitchen . So made this nice gravy for roti!!!!
Ingredients :
1 onion medium sized chopped
1 tomato medium sized chopped
2-3 tbsp coconut grated
4-5 cashews
2 green chillies
2-3 cloves garlic
1/2 tsp ginger finely chopped
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp coriander powder
1/2 tsp garam masala
1/2 tsp cumin powder
6-7 curry leaves
1 tsp oil
Coriander leaves chopped
Mint leaves chopped
Salt as required
Method:
1. Soak cashews in warm water for about 20 mins.
2. Take cashews, coconut, garlic & green chillies in a blender & grind to a fine paste & keep aside.
3. In a pan add oil & mustard seeds. After they crackle add cumin seeds.
4. Now add onions, curry leaves, ginger & fry till onions are cooked. Add tomatoes & cook till they become soft.
5. Now add turmeric powder, chilli powder, coriander powder, garam masala, cumin powder. Mix together & cook for about 2 mins.
6. Now add 1 1/2 cups of water, the cashew-coconut paste & required salt. Allow to boil till required consistency is achieved.
7. Garnish with coriander & mint leaves.
8. Serve with rotis.
