1 ½ cup Basmati rice
1 medium sized onion sliced
¼ cup veggies (beans, carrot & capsicum) chopped
4-5 cloves garlic
1” ginger
2 green chillies
(2 for grinding)
1 tsp pepper powder
2 cloves
½ “ cinnamon
3-5 cardamom
2-3 bay leaves
1 star anise
2 tbsp ghee/butter
1 tbsp oil
Coriander leaves/spring onions chopped
Salt as required
Method:
1.
Wash basmati rice & keep aside.
2.
Take garlic, ginger, green chillies, cloves and
cinnamon in a blender and grind to a fine paste by adding a little water.
3.
In a pressure cooker, add ghee & all other
spices. Then add ground paste to this and fry till raw smell leaves.
4.
Add basmati rice to this and fry in ghee for
about 1 min . and add 1 ¾ cup of water, required salt and close the lid. Allow
upto 3 whistles. Wait till pressure
releases.
5.
In a pan, add oil. When oil heats, add green
chillies and onion. Fry till onion is cooked. Then add the veggies, pepper
powder and required salt only for the veggies. Cook on high flame for about 3-4 mins.
6.
Finally add the cooked rice to this and mix
together.
7.
Garnish with coriander leaves/spring onions
& serve with raitha.
