CHEESY -VEGGIE BREAD BASKETS

Ingredients :


 6-8 bread slices
1 cup Paneer grated 
1 onion finely chopped
1/4 cup carrot grated
1/4 cup green bell pepper finely chopped
3-4 green chillies finely chopped
1/4 cup cheese grated
1/4 cup coriander leaves chopped
1/4 cup mayonnaise
1 tsp black pepper powder
1 tbsp dried Italian herbs
1 tsp chilli flakes
1 tsp butter
Salt as required


Method :

 1. Mix onions, paneer, carrot, capsicum, green chillies, black pepper powder & coriander leaves. Add required salt & mix together.

 2. Cut off the edges of the bread and flatten it using rolling pin.


 3. Wet both sides of the flattened bread with water using your hands.
4. Brush butter in the Muffin mould. Arrange the bread in Muffin moulds to form a basket.

 5. Cut off excess bread.


 6. Add the filling in each basket. Squeeze mayonnaise over it.


 7. Top it with grated cheese.
8. Finally garnish with Italian herbs, coriander leaves & chilli flakes.

 9. Bake this in oven for 10-12mins at 180 degrees Celsius.


 10. Now the baskets are ready. Serve hot with chilli sauce or any sauce of your choice.
 

BREAD SANDWICH ROLLS

Ingredients :

 4-6 bread slices
2 potatoes boiled & mashed ...
1 onion finely chopped
1/4 cup carrot grated
1/4 cup green & yellow bell
pepper finely chopped
1/4 cup cheese grated
2-3 green chillies finely chopped
1 tbsp dry Italian herbs
1 tbsp mustard sauce
1 tbsp mayonnaise
Coriander leaves chopped
2 tbsp butter
Salt as required


Method:

 1. Mix all the above Ingredients except bread slices & butter. Keep aside for 5 mins.

 2. Cut off the edges of the bread and flatten it using a rolling pin.
3. Now add the Veggie -Cheese mixture to one end of the slices & roll the bread slices. Seal the end by using water.



 4. Brush butter over the rolls.


 5. Pre heat oven to 180 degrees Celsius & bake the burger for 6-7 mins.

 6. Serve hot with any sauce of your choice.

 

PANEER-TOFU BREAD SAMOSA

Ingredients :

 8-10 bread slices
1 cup Paneer grated...
1/2 cup tofu
1/2 cup green peas boiled
1 onion finely chopped
2 green chillies finely chopped (+ 2-3 for grinding)
1/4 cup green Capsicum finely chopped
1 tsp ginger chopped
1/2 tsp cumin seeds
1/2 tsp garam masala
1/2 tsp chaat Masala
1/2 tsp black pepper powder
1/4 cup coriander leaves chopped
2 tbsp oil
Oil for frying
salt as required


Method :

1. In a blender take boiled green peas, 3 green chillies & ginger. Grind to a coarse paste.
2. In a pan add, 1 tsp oil. When oil heats add tofu & fry till it becomes life burji. Keep aside.
3. In another pan add remaining oil. When oil heats add cumin seeds. Then add onions & fry for 2-3 mins.


 4. Now add tofu burji & peas paste. Mix together.


 5. Add grated Paneer & required salt. Add garam masala, chaat masala & pepper powder.Mix & cook for 2-3 mins.


 6. Finally add chopped coriander leaves & allow to cool.


 7. Now cut off the edges of the bread and flatten it using a rolling pin.
8. Wet both sides of the flattened bread with water using your hands.
9. Make a cone of the bread & seal. Add the filling & seal the opening by pressing with your hands. You can cut off excess bread.


 10. Heat oil in a pan & fry the samosas till they turn golden brown.


 11. Serve hot with any sauce of your choice.

CHEESY PANEER BREAD PIZZAS


Ingredients :

6-8 bread slices
1 onion chopped
1 cup bell peppers (green & red)   
1 Tomato chopped
1/2 cups Paneer small cubes
1/4 cup cheese grated
1 tbsp dry Italian herbs
1/2 tbsp black pepper powder
1/2 tbsp chilli flakes
1/2 cup mint coriander chutney
2-3 tbsp Thai chilli sauce (or normal chilli sauce)
Salt as required


Method :

1. Cut the edges of the bead slices.
2. Mix all the veggies (you can use more veggies of your choice) and Paneer along with Italian herbs, chilli flakes, black pepper & required salt.



 4. First spread Mint-coriander chutney on the bread slices followed by chilli sauce.


 5. Spread the veggies mixture on all the bread slices.



 4. Top this with grated cheese.



 5. Pre heat oven to 180 degrees Celsius. Bake the Pizzas for about 8-10 mins.


 6. Serve hot with any sauce of your choice.


 

YAM MASALA FRY

Ingredients :

1 cup Yam chopped into fingers
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp urad dhal
1/2 tsp turmeric powder
1 tsp sambhar powder
1/2 tsp chilli powder
1/2 tsp garam masala
1 tsp thin tamarind extract
6-8 curry leaves
Coriander leaves chopped
2 tbsp oil
Salt as required

Method :

1. Cut Yam into fingers and soak in water till you start cooking.
2. In a pan add oil. When oil heats add mustard seeds. When it crackle add urad dhal & cumin seeds.
3. Then add chopped Yam fingers, turmeric powder, required salt, tamarind extract & 1 cup water.

4. Cover with lid &  cook.
5. When it is 3/4 cooked add all other spices, curry leaves & mix together.

6. Increase the flame &  cook on high till all water evaporates &  masalas get coated.

7. Garnish with coriander leaves &  serve.

MINT-CORIANDER RICE

Ingredients :

 1 1/2 cups basmati rice
1 cup mint leaves washed
1 cup coriander leaves washed
2-3 tbsp coconut grated
4 green chillies (for grinding) + 2 split
1 onion chopped
1/2 tsp mustard seeds
1/3 tsp urad dhal
1/2 tsp turmeric powder
10-15 cashews
2-3 tbsp oil
1 tbsp ghee
Salt as required



Method :

 1. Soak basmati rice in water for 20 mins.
2. In a blender take mint leaves, coriander leaves, grated coconut & green chillies. Grind to a fine paste by adding water.
3. In a pressure cooker add oil. When oil heats add mustard seeds. After they crackle add urad dhal, split green chillies & turmeric powder.
4. Add onions & fry for about 2-3 mins.
5. Than add the Mint-coriander paste & fry for about 2-3 mins.
6. Add basmati rice & 2 cups water & required salt. Mix together & close lid. Allow upto 3 whistles.
7. In another pan add ghee & fry cashews.
8. When pressure releases open lid & add fried cashews & mix together.
9. Serve with papad or raitha.

RAW BANANA MASALA FRY

Ingredients :

 1 cup raw banana peeled & chopped
1/2 tsp mustard seeds ...
1/2 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp sambhar powder
1/2 tsp black pepper powder
1/2 tsp chilli powder
1/2 tsp garam masala
1 tsp thin tamarind extract
6-8 curry leaves
Coriander leaves chopped
2 tbsp oil
Salt as required



Method :

 1. Cut raw banana and soak in water till you start cooking.
2. In a pan add oil. When oil heats add mustard seeds. When it crackle add cumin seeds.
3. Then add chopped raw bananas, turmeric powder, required salt, tamarind extract & 1 cup water.
4. Cover with lid & cook.
5. When it is 3/4 cooked add all other spices, curry leaves & mix together.
6. Increase the flame & cook on high till all water evaporates & masalas get coated.
7. Garnish with coriander leaves & serve.

RAWBANANA-PANEER BALLS IN BAKED SPAGHETTI MUFFINS

Ingredients :

 100 gms Spaghetti
1/2 cup pasta sauce of your choice ( I used carbonara Mushroom)
1/4 cup grated carrot & chopped Capsicum
1/4 cup grated cheese
Coriander leaves chopped
1/2 tsp dried mixed Italian herbs
Salt as required

For the balls :
1 raw banana peeled, boiled & mashed
1 onion chopped
1 cup grated Paneer
3 green chillies finely chopped
1/4 cup bread crumbs
Coriander leaves chopped
1/2 tsp chilli flakes
1/2 tsp turmeric powder
1/2 tsp garam masala
Salt as required

Method :

 1. Boil Spaghetti as per packing instructions adding salt & olive oil.
2. In a bowl mix all ingredients under 'for the balls'. Mix to make a dough.

 3. Make balls out of the mixture.


 4. Bake the balls in oven at 180 degrees Celsius for 10 mins & roll over & bake for another 5 mins.

 6. Now Grease the Muffin moulds. Add boiled Spaghetti into the moulds.
 7. Keep the balls in the moulds. Add 1 tbsp of pasta sauce on each ball.

 8. Top with grated carrot, chopped green Capsicum, cheese, chopped coriander leaves & Italian herbs.


 9. Bake the Muffin for 20-25 mins at 200 degree Celsius.


 10. Leave it undisturbed for another 10 mins.
11. Garnish with grated cheese & coriander leaves.
