VEGETABLE KURMA

Ingredients :

 1 1/2 cups mixed veggies (beans, carrot, potato, cauliflower, baby corn, capsicum) chopped
1 onion chopped ...
1 tomato chopped
3-4 garlic cloves
3-4 tbsp coconut grated
5-6 cashews
2-3 green chillies
1/2 tsp turmeric powder
1/2 tsp cumin seeds
1/2 tsp fennel seeds
1 tsp curry powder
1 tsp chilli powder
1/2 tsp cumin powder
1/2 tsp garam masala
1 tbsp oil
8-9 curry leaves
Salt as required



Method:

 1. Soak cashews in warm water for about 10 mins.
2. Take coconut, cashews, garlic, green chillies & fennel seeds in a blender & grind to a fine paste.

 3. In a pan add oil. When oil heats add cumin seeds. After they crackle add onions & tomatoes. Fry till tomatoes are soft.


 4. Add turmeric powder, curry powder, cumin powder, chilli powder, garam masala & fry for 2-3 mins.


 5. Now add all veggies, required salt & 1 cup of water. Cover & cook till all the veggies are cooked.

 6. Add the paste & cook for 4-5 mins or till your required consistency is achieved.

 7. Garnish with coriander leaves & serve with rotis.
