EGG PEPPER FRY

Ingredients :

6 boiled eggs ...
1 onion finely chopped        
1 tomato finely chopped
6-8 cloves garlic
1 tsp cumin seeds
1 tbsp whole black pepper
1/2 tsp mustard seeds
1/2 tsp turmeric powder
6-7 curry leaves
1 tbsp Maida
1 tbsp rice flour
1/2 tsp chilli flakes
1/2 tsp dried mixed Italian herbs
1 tbsp oil
Coriander leaves chopped
Salt as required






Method :

 1. Grind cumin seeds & black pepper corns coarsely in a blender.
2. Cut eggs into halves.


 3. Mix maida, rice flour, chilli flakes, Italian herbs & required salt. Make a paste by adding water.

 4. Now dip each egg half in the paste & shallow fry them. Keep aside.
 

 5. In a pan add oil. When oil heats add mustard seeds.
 6. When mustard seeds crackle add onions & garlic. Fry for 2-3 mins.

 7. Add tomatoes, curry leaves & cook till they become soft.


 8. Add turmeric powder & cumin-black pepper powder. Mix together & cook for about 2-3 mins.

 9. Finally add fried eggs & required salt. Cook for 3 mins.


 10. Garnish with coriander leaves & serve with rotis.
