BREAD-OATS IDLI & COCONUT CHUTNEY

Healthy Breakfast
Quick & easy to make

Ingredients :
6-8 bread slices( I used wholemeal)
1/2 cups powdered oats
1/4 cup curd
3-4 tbsp grated carrot
2-3 green chillies finely chopped
Coriander leaves chopped
Oil as required
Salt as required
For coconut chutney:
4-5 tbsp grated coconut
2 tbsp roasted gram
2-3 green chillies
A pinch of tamarind
1 tbsp coriander leaves
Salt as required
1/2 tsp mustard seeds
1/2 tsp urad dhal
5-6 curry leaves
1 tsp oil

Method:
1. Cut off the edges of the bread & cut into small pieces. Soak them in 3/4 cup water for about 5 mins.

2. Take soaked bread, curd & required salt in blender & grind to a fine paste.

3. Transfer to a bowl & add oats powder, grated carrot, chopped green chillies & chopped coriander & mix together. The batter should be as in usual idli batter.

4. If there is excess water you can add oats powder to it.
5. Leave it aside for 20 mins.

6. In a idli pan, brush oil & pour the batter. Allow to steam foe about 8-10 mins & switch off.
6. For not disturb the idlis for another 7-8 mins.
7. Take coconut, gram dhal, green chillies, tamarind, coriander leaves & required salt. Grind to a fine paste & transfer chutney to a bowl.
8. In a pan add oil & mustard seeds. After they crackle add urad dhal & curry leaves. When urad dhal start changing color add this to the chutney.
9. Serve hot idlis with coconut chutney (or any chutney of your choice) and sambhar.
