PANEER-MUSHROOM VEGGIE FRANKIES

Ingredients :
2 cups Maida( you can also mix atta with this)
1 tbsp butter/ghee
1 onion finely chopped
1 tomato finely chopped
1 tsp garlic chopped
1 tsp ginger chopped
1/4 cup grated Paneer
1/4 cup Mushroom grated or finely chopped
1 1/2 cups mixed veggies (beans, carrot, potato, cauliflower, cabbage, green bell peppers)
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp chilli powder
1 tsp garam masala
1/2 tsp cumin powder
1/2 tsp pepper powder
1 tbsp oil
Coriander leaves chopped
Salt as required
Method:

1. Mix maida, required salt & butter. Knead to a soft dough by adding warm water. Leave aside for 1/2 hr.
2. In a pan add oil & cumin seeds. When they start to crackle add garlic & ginger.
3. Then add onions & turmeric powder. Add tomatoes to this & cook till they become soft.
4. Add all other veggies, mushroom, chilli powder, garam masala, cumin powder & required salt. Close & cook till the veggies are fully cooked & all water is evaporated.
5. Finally add grated Paneer to this & fry for about 2-3 mins. Switch off stove & add coriander leaves & mix.
6. Now make thin rotis from the dough & cook on both sides of the rotis on a tawa. You Can add a little butter to this.
7. Fill each roti with the filling in the centre & garnish with grated Paneer & close only from both ends.
8. Serve hot with any sauce if your choice.
