EGGPLANT BURGER WITH EGG-BROCCOLI-POTATO SALAD


Ingredients :
For Burger :
3-4 burger buns
1 big Eggplant cut into roundels thickness of your choice
1/4 cup all purpose flour 
1 egg beaten
1/4 cup bread crumbs
1 tbsp chilli powder
1/2 tsp pepper powder
1/2 tsp lime juice
Oil for shallow fry
Garlic spread as required
Salt as required
Egg spread:
3 egg yolks
2-3 tbsp fresh cream
1 small onion finely chopped
2-3 tbsp green bell pepper finely chopped
1 tsp garlic finely chopped & roasted
1 tsp olive oil
1/2 tbsp pepper powder
1/2 tbsp chilli flakes
1/2 tbsp lime juice
Salt as required
Salad:
1/4 cup boiled & cubed potato
1/4 cup boiled broccoli
1/2 cups boiled egg white chopped
1/2 tbsp olive oil
1/2 tsp chilli flakes
1/2 tsp pepper powder
1/2 tsp dried mixed Italian herbs
Salt as required
Method:
1. Mix chilli powder, pepper powder, lime juice and salt by sprinkling water.
2. Apply this paste on both sides of the egg plant.
3. Take 3 bowls. Add all purpose flour, beaten egg & bread crumbs into the bowls.
4. Now dust each eggplant with flour, then dip in egg & then into the bread crumbs.

5. Heat oil for shallow fry & fry all the eggplants.

6. Now mash the egg yolks & add all ingredients under 'egg spread' & mix together.

7. Cut the burger buns in the middle, apply garlic spread & toast on tawa.
8. Apply the egg spread on one half of the toasted buns & keep the fried egg plants on it. Cover with the other bun.

9.. In a pan add olive oil. When oil heats add potato, broccoli & egg whites & toss. Add chilli flakes, pepper powder, Italian herbs & required salt & toss for few seconds. The salad is all ready to be served with the burger.
